Beef Style Meatballs with Roasted Tomato Sauce with Chilli & Cherry Tomatoes


  • 400g Frozen beef style meatballs
  • 1 Onion
  • 400g (1 can) cherry tomatoes
  • 50g Roasted tomatoes
  • 1 batch of the Roasted Pepper & Tomato
  • Sauce (please see sauce section)
  • Roasted tomato puree
  • 4 Garlic cloves
  • 1 Hot chilli, deseeded and diced
  • Oil Spray
  • Seasoning
  • Flat leaved parsley
  • 150g-300g dried weight spaghetti


  1. In a thick-based non-stick pan, spray oil. Fry off the meatballs and onion for 8 minutes.
  2. Add the tomato puree and cook for 1 minute. Add all other ingredients and cook for 25-30 minutes. Reducing down the liquid to thicken.
  3. Cook spaghetti as per instructions and serve.
  4. Garnish with parsley.

Homemade Roasted Pepper and Tomato Sauce

Homemade Roasted Pepper & Tomato Sauce

  • Ingredients
  • 1 red pepper
  • 1 yellow pepper
  • 1 onion
  • 2 courgettes (optional)
  • 200g fresh cherry tomatoes (optional)
  • 400g (1 can) chopped tomatoes
  • Carton of passata
  • 3 cloves of garlic
  • Pinch of thyme
  • Pinch of marjoram
  • 1 bay leaf
  • Seasoning


  1. Chop the peppers, onions, tomatoes and courgettes.
  2. Add to a large ovenproof dish and spray oil all over the ingredients. Place in a hot oven for 25 minutes.
  3. Once the ingredients are browned, place in a food processor and whizz for 5 minutes along with the canned tomatoes, passata and garlic.
  4. Once blended place in a saucepan on a low heat and add a pinch of thyme, marjoram and a bay leaf. Slowly simmer for around 10 minutes & season to taste.

This sauce can be used for our Meatballs and Spaghetti Bolognese, as well as smothered onto your pizza base!
