Chilli Con Carne


  • 300g beef style mince
  • 1 diced white onion
  • 1 diced red pepper
  • 2 garlic cloves peeled and diced
  • Roasted pepper and tomato sauce (see recipe)
  • 1 can of kidney beans, washed and drained
  • 1 tsp brown sugar
  • 1/2 tsp marjoram
  • 1 tsp paprika
  • 1 chilli deseeded and diced


  1. Fry off your onion for around 20 minutes until golden brown to add flavour and colour to the dish.
  2. Add the red pepper, chilli & garlic, cook for around 5 minutes
  3. Add all other ingredients and cook for 20 minutes until the liquid is reduced and the sauce has thickened
  4. Season to taste
  5. Serve with rice. Cook the rice using the microwave method. Take one cup of rice and two cups of boiling water and place on a microwave dish with seasoning and a lid on. Cook on high for 15 minutes and serve.

Homemade Roasted Pepper and Tomato Sauce

Homemade Roasted Pepper & Tomato Sauce

  • Ingredients
  • 1 red pepper
  • 1 yellow pepper
  • 1 onion
  • 2 courgettes (optional)
  • 200g fresh cherry tomatoes (optional)
  • 400g (1 can) chopped tomatoes
  • Carton of passata
  • 3 cloves of garlic
  • Pinch of thyme
  • Pinch of marjoram
  • 1 bay leaf
  • Seasoning


  1. Chop the peppers, onions, tomatoes and courgettes.
  2. Add to a large ovenproof dish and spray oil all over the ingredients. Place in a hot oven for 25 minutes.
  3. Once the ingredients are browned, place in a food processor and whizz for 5 minutes along with the canned tomatoes, passata and garlic.
  4. Once blended place in a saucepan on a low heat and add a pinch of thyme, marjoram and a bay leaf. Slowly simmer for around 10 minutes & season to taste.

This sauce can be used for our Meatballs and Spaghetti Bolognese, as well as smothered onto your pizza base!

Finish with a spoonful of soured cream or for a real Mexican twist add one large lump of dark chocolate!
